1 1/2 sticks Butter
1 Cup Greek Yogurt
4 Cups Flour
5 Mashed Bananas
1 1/2 Cups Brown Sugar
1 Bag Semi-Sweet Chocolate Chips
1 Bag Mini Chocolate Chips
2 Teaspoons Baking Soda, and Cinnamon
1 Teaspoon Salt. Cloves, and Allspice
makes about 45 tablespoon scoop sized cookies
blend the sugar, room temperature butter and Greek yogurt in a stand mixer. add the eggs one at a time and then the bananas.
add the flour, spices and chocolate chips. batter will be SUPER thick, so the whisk attachment is not suggested. the beater and scraper or a dough hook attachment will work much better for you.....trust me.
line 5 baking sheets (i just did this in five batches, replacing the parchment paper) with wax paper. use a tablespoon (i like the rounded kind specifically for measuring in recipes) to scoop up some batter. use a standard spoon to scoop the batter out on top of the parchment paper. these dont spread much and the rounded scoop helps with the cake-y 'height' they have. i fit about 9 big cookies per tray.
bake at 350 for 10 -15 minutes depending on the oven. remove when the cookies begin to brown. break one open to make sure the batter is cooked and to see the amazing chocolaty goodness oozing inside
