the plan was to stick it ion the crock pot to cook and then crisp the bird in the oven once i got home. so i tossed some veggies in the crock pot and the duck on top with oil and seasoning. this went on low for oh, about 6 hours......
2 Tablespoons each: Thyme, Garlic Powder, Onion Salt, Rosemary
1 Tablespoon Each: Celery Seed, Black Pepper, Parsley
Roughly chop onions and plance in the bottom of the crock pot. rub duck all over and underneath the breast skin with oil and spices.
Nestle the Duck breast side down in the crock pot, on top of the onions. give the bird a splash of water or white wine if you like. set on low for 6-8 hours
remove the bird from the crock pot and shred meat. reserve the bones, juice in the bottom of the crock pot and cooked onions for making broth and Rendered fat. (in fact, i just added water to the crock pot as i was, plus the skin, fat and bones of the duck and set it on low for 8 hours to get my final broth. i set that broth in the fridge and then skimmed it to obtain the duck fat to render)
Serve shredded duck with mashed potaoes and a healthy portion of Duck Fat Sauteed Greens
